    • Peanut Butter Chocolate Chip Drop Cookies - subbed in leftover Heath Bars from Halloween candy, a Baker's Chocolate bar and a handful of chocolate chips (also chopped up a lone sad granola bar...)
    • Waffles - have made these a bunch, subbed in Strawberry Greek Yogurt, and doubled the batch. Made so many!!

Episode #14: My Dinner In A Box

This Week: We hop on board the Dinner Box Subscription Train, and try out a few options for nights when you just can’t with the thinking...



  • Non-Box Cookin’

    • Meredith’s waffle extravaganza

    • Grilled (West Coasters BBQ) with hot dogs & hamburgers with Corn on the Cob - shuck the corn out of the silk etc, cover in butter then wrap 5 at a time in aluminum foil. Sara’s Dad removes the silk and then grills in the husks.

    • Oven Garlic Bread - french bread loaves, smother with butter, add Paula Dean’s House seasoning (1 cup of kosher salt, ¼ cup fresh ground pepper, ¼ cup garlic powder). For the cheesey ones, add provolone cheese and parmesan cheese.

    • Aaron’s Garlic Bread - bread, cut slices in it, butter or olive oil between each slice with garlic salt and italian seasoning

  • Sara’s Sun Basket Box

    • Creole Shrimp & Rice with Charred Peppers -substituted mini peppers for padrona


  • Meredith’s Blue Apron Box (some were shared with Sara because M couldn’t cook them in time…)

    • Grilled Goat Cheese & Plum Jam Sandwiches with endive & marinated cucumber salad

    • Sweet Corn & Tinkerbell Pepper Pizza w/ fontina cheese & baby kale

    • Fresh Pappardelle Pasta with Summer Tomato-Olive Ragu & Ricotta Salata

  • Meredith’s Hello Fresh Box (HelloFresh.com If you want to get a coupon/discount rate you can use: 3XBZWS. Full Disclosure: This code gets me a discount as well!):

    • Quick Sausage Bolognese - Italian Sausage, Onion, Carrots, Garlic, Button Mushrooms, Crushed Tomatoes, Beef Stock COncentrate, Parmesan Cheese, Spaghetti, Spinach and Basil. Dice Onion, carrot, garlic, and button mushrooms. Cook veggies until softened, add salt and pepper. Remove sausage from the casings and brown with veggies. Add the crushed tomato, stock concentrate in the pan and let thicken. Stir the spinach into the Bolognese to wilt. Cook the spaghetti to al dente. Combine together and top with parmesan and basil leaves.

    • Cheesy Beef Quesadillas - Ground Beef, Whole Wheat Tortillas, Avocado, Grape Tomatoes, Limes, Red Onion, Cilantro, Mozzarella Cheese, Sour Cream, Dried Oregano, Black Beans. Chop all the veggies. Cook the onions over medium heat with olive oil, once they are softened add the ground beef and oregano into the pan. Cook until browned. Assemble the tortillas on a cookie sheet - rub one side of each tortilla with a small drizzle of olive oil and place oil-side down. Sprinkle half of each tortilla with cheese and add the ground beef. Fold the tortillas in half and bake. Make a salsa with the avocado, black beans and cilantro, add a squeeze of lime juice.

Our feelings about the boxes:

  • Good for getting out of a rut and trying new things/ingredients. You aren't having to purchase a lot of spices when you aren't sure if you'd like it.

  • Good for learning new cooking skills for those starting out because instructions are easy to follow, Blue Apron has a good guide for what to have on hand/cooking essentials for the new cook:



  • Don’t like the fact that you have to prep every time, instead of setting up prep at one time for several meals. Takes a lot more time to set up vs. cooking on my own.

  • These meals are densely caloric, however portions can be stretched 2 to 3 servings.

  • We don't always like the methods they suggest for cooking.

  • Not enough spices for us, tend towards being bland. Both M & S added significantly more spices to each dish.

  • Good for those who don't like grocery shopping, like to follow directions, you don't have to think about it.

  • Good to be used to introduce kids/new cooks to different flavor combinations, different cooking techniques, etc.

  • Limited options for those with dietary restrictions (ie. Diabetic, gluten free, or even vegetarian...) also restrictions for those who don't eat certain kinds of meat (pork).

  • We don't find that the time suggested, and actual time to set up and cook matched up. Generally took longer than they suggested.




Episode #13: Someone’s in the kitchen with Katie!

This Week: We settle in for an awesome chat with Katie Coleman, owner of Durham Spirits Co, and our #girlcrush - She even shares her grandmother’s secret recipe with us!! (and you may have to turn it up, because we are uncharacteristically quiet this episode…)



  • Chicken Kale Caesar Wraps from Budget Bytes

  • Sara’s Cowboy Caviar

  • Sara’s Lemony Chickpea Yums

    • 2 cans of chickpeas, diced red onion, rocket or arugula, walnuts, feta cheese, lemon juice and zest and greek yogurt. Mix together and serve on an assortment of yummy fluffy breads.

  • Our Dream Food on a stick: Shrimp & Grits with Pimento Cheese! Get on that y’all!


  • Meredith’s Cheesecake Disaster

    • Assemble Cool Whip, cream cheese and cake packet (mixed with hot water) into graham cracker crust. Proceed to drop on floor and make it work.





Episode #12: We Hate to Move-it! Move it!

July 25, 2016

This Week: Sara and Meredith chat about the trials and tribulations of moving, and some alternative uses for frozen burritos!



  • Meredith’s Blue Apron sandwich

    • Homemade pulled pork in the crockpot (using this recipe as a base) in this version I used pork loin, 1 can of cherry coke, HT Traders Barbecue Sauce - Eastern Style, Apple Cider Vinegar, 1 chopped white onion. 1. Dump in crock pot. 2. Set for 4 hours high, 6 hours medium or 8 hour low. 3. Enjoy!

    • Blue Apron Sandwich: Sourdough bread, goat cheese, plum, shallot, cucumber, lemon, garlic, sugar, white endive. Slice the cucumber and marinate in garlic, lemon juice, shallot and salt & pepper. Add sliced white endive to salad and set aside. Make your own plum jam by chopping up the plum and cooking with shallot and sugar & water over high heat for about 5 minutes then simmer. Assemble sourdough bread, jam and goat cheese, then make grilled cheese on stove top. Meredith’s additions: add fresh ground ginger to the plum jam. Don’t put jam inside the sandwich! Assemble sandwich with just goat cheese, then top with pulled pork and drizzle jam on top. Serve with cucumber salad in between 2 triangle slices of sandwich.

Episode #11: Summertime and the livin’ is easy…

This Week: Talking about cooking in the summer, how to keep from overheating and still eat well



  • Summertime Drinks:

    • Drink -summer beers (low abv, light, crisp, citrus) Sara's suggestions - Ruby redbird & El toro

    • Sweet/unsweet tea

    • Fruit tea + ice + nalgene full of water

    • Sparkling Water

    • Sodastream

    • Totally forgot to talk about this on the show, but

  • What do you eat when it’s too hot to eat?

    • Grilling-- Sara’s dad’s technique for never ever ever turning on the a/c until absolutely necessary and the home repairs that never end

    • Grill avocados/onions/peppers before making guacamole

    • Use olive brine to baste anything you are grilling, shave garlic over resting meat

    • Spicy Stuff

    • Salads. All the salads! Lettuce and fruit salads. Yum.

    • stuff you don’t cook -night of 1000 snack trays


    • Ceviche, all the ceviche!

    • Use appliances other than the oven to cook, like the crockpot or Meredith’s favorite a Panini Press.

    • Cook in the oven early in the morning! Take the opportunity to cook Bacon in the Oven!! Bacon in the oven - line a cookie sheet with aluminum foil, place bacon on sheet and put into a cold oven, set to 400 degrees and set a timer for 20 minutes

    • Hot fruit desserts! Here are some good recipes to check out.

    • Sara’s Patriotic Jello Shots!

    • Frozen Coolwhip! Chocolate Graham Crackers with Coolwhip! Frozen. So good. You can also just eat it straight out of the tub. Sara makes it like a lasagna layered with Graham Crackers, Coolwhip! And jam.

    • Frozen fruit as ice cubes. Sara likes Frozen grapes.

    • HOMEMADE ICE CREAM! Make a cake with ice cream! Meredith is making an ice cream cake for getting over 10,000 listeners! And you don’t need an ice cream maker - using a food processor to make it. Freeze homemade custard in the freezer overnight and then pulse to creamy consistency.

  • Make alike Chic-fil-A nuggets

  • Homemade Waffle Mix - using this recipe

  • Tuna Poke - so yummy! @FitMenCook

  • Smitten Kitchen’s Red Velvet Cake Recipe

  • Egg cups - chop veggies (tomato, onion, garlic, kale), sautee veggies in a pan, wilt spinach, butter/spray muffin tin cups, scramble eggs with a little milk, put veggies in muffin cups and add a little bit of scrambled eggs to each cup, top with cheese! WARNING: be careful - because people apparently really like these and will steal them out of your office fridge. Don’t go all Ross on them!
